Keto Turmeric Cauliflower Asparagus Rice

Ingredients
  • ½ head cauliflower
  • ¾ lb. asparagus
  • 2 tsp olive oil -divided
  • ½ yellow onion
  • 1 tbsp curry powder
  • 1 tsp turmeric (95% curcuminoids to be effective)
  • ¼ tsp ground cayenne pepper
  • ½ tsp ground black pepper
  • ¼ tsp salt (pink himalayan)
Instructions
  1. Chop cauliflower into florets. Add cauliflower little at a time in a food processor or chopper and pulse until cauliflower pieces are about rice size.
  2. Cut asparagus into 1-inch pieces. Add the asparagus to the food processor or chopper and pulse until the asparagus is about the size of rice.
  3. On medium, heat teaspoon of olive oil in a large skillet. Add chopped onion and cook until tender, about 5 minutes.
  4. Add another teaspoon of olive oil to skillet. Stir in cauliflower, asparagus, and spices (hold the salt). Spread veggies over the bottom of the skillet and cook about 2 minutes. Stir. Repeat until tender. (10 minutes)
  5. Season with salt.
