Easy Turmeric Vegetable Shrimp Sheet Pan Meal is healthy, Keto friendly, simple to prepare, and delicious.  This low carb meal is sure to be a favorite!
Ingredients
  • 2 tbsp olive oil
  • 7 tsp fresh lime juice
  • 1 tsp curry powder
  • 1 tsp turmeric
  • ½ tsp pink himalayan salt
  • ¼ tsp ground black pepper
  • ¼ tsp ground cayenne pepper (or use additional black pepper)
  • 1 lb large, raw shrimp (peeled)
  • 2 zucchini, slice in bite sized rounds
  • 1 large onion, sliced bite sized pieces
  • Chopped cilantro (optional)
Instructions
  1. Preheat the oven to 425 degrees F. Spray sheet pan with cooking spray.
  2. In a small bowl whisk together olive oil, lime, and spices.
  3. Add shrimp to one bowl and zucchini in another bowl.
  4. Divide curry turmeric spice mixture between the shrimp and vegetable bowls.
  5. Toss to coat the shrimp and zucchini.
  6. Add zucchini to sheet pan in single layer. Add onion in single layer. Bake for 4 minutes.
  7. Add shrimp over zucchini and bake until the shrimp lose their opaqueness and turn white (about 5-7 min).
  8. Sprinkle with cilantro when serving.
